Low crowds, variety in terrain, holds snow well
Few steeps, no speed lifts
Visited Brian Head on a Saturday 1/9/10, and it had been two weeks since the last major snowfall. High altitude and cold temps meant packed power base was still in good shape, no ice, no bare spots. Very fun "backcountry" (but still patrolled) area on north end near Devo's Pitch, just wished "Devo's Pitch" was 3x as long. Bus from Cedar City in case you don't want to (or can't, chains/4WD req'd when significant snowfall) drive up the mountains to the resort. 3hr beautiful 75MPH drive from Vegas. Didn't bother with small-looking Navajo peak.
