I am just coming back from a 3 day stay at Hunter. The mountain is extremely well-maintained, and the conditions were great. You can not get better than this 2 hours from the city. We stayed at the Mountain Brook hotel, excellent! Nice rooms, and Wendy (the GM) is so nice. The only thing bad about Hunter is the food, it is a disaster. The food they serve at the mountain/cafeteria is really bad, how can you even do that bad. An advice, pack your sandwiches from the city or just buy a cookie and a coffee there, seriously, the food is a shame. Other than that, Hunter is a very cool ski destination to warm up before your "big" ski trip.
